  • mustard seeds
  • fennel seeds
  • cumin seeds
  • dried red chili
  • turmeric
  • coriander powder
  • jaggery (gur) or sugar
  • oil
  • salt

  • 500 g pumpkin or butternut squash, peeled and cubed
  • 0.5 tsp mustard seeds
  • 0.5 tsp fennel seeds
  • 0.5 tsp cumin seeds
  • 1 whole dried red chili
  • 0.5 tsp turmeric
  • 0.5 tsp coriander powder
  • 1 tsp jaggery (gur) or sugar
  • 2 tbsp oil
  • 0.75 tsp salt

Instructions

  1. Heat oil in a pan; add mustard, fennel, cumin seeds, and dried chili; let sizzle.
  2. Add pumpkin cubes; toss to coat in tempering.
  3. Add turmeric, coriander powder, salt, and a splash of water; cover and cook 12 minutes.
  4. Remove lid; cook 3 more minutes until edges caramelize slightly.
  5. Add jaggery; toss and cook 2 minutes until glazed.
  6. Serve warm with puri, roti, or dal-rice.
