Ingredients

  • 2 lbchicken breast, sliced into strips
  • 3 wholebell peppers (red, yellow, green)
  • 1 wholewhite onion, sliced
  • 2 tbspfajita seasoning
  • 2 tbsplime juice
  • 2.5 cupwhite rice, cooked
  • 0.3 cupcilantro, chopped
  • 2 tbspolive oil
  • 1 wholeavocado (for serving)

Ingredients

  • 2 lb chicken breast, sliced into strips
  • 3 whole bell peppers (red, yellow, green)
  • 1 whole white onion, sliced
  • 2 tbsp fajita seasoning
  • 2 tbsp lime juice
  • 2.5 cup white rice, cooked
  • 0.25 cup cilantro, chopped
  • 2 tbsp olive oil
  • 1 whole avocado (for serving)

Instructions

  1. Toss chicken strips with fajita seasoning and lime juice. Marinate 15 min if time allows.
  2. Heat oil in a large skillet over high heat. Cook chicken 4–5 min until char marks appear.
  3. Add peppers and onions. Cook 4–5 min until softened with slight char.
  4. Mix rice with cilantro and a squeeze of lime.
  5. Portion into 5 containers: cilantro rice, fajita chicken, and veggies.
  6. Add avocado slices just before eating.
