  • pork shoulder
  • lard
  • orange
  • garlic
  • bay leaves
  • cinnamon stick
  • milk
  • salt
  • corn tortillas

Ingredients

  • 1200 g pork shoulder
  • 200 g lard
  • 2 units orange
  • 6 cloves garlic
  • 4 units bay leaves
  • 1 unit cinnamon stick
  • 120 ml milk
  • 15 g salt
  • 16 units corn tortillas

Instructions

  1. Cut pork into 5cm cubes, season liberally with salt.
  2. Melt lard in heavy pot, add pork, orange juice and zest, garlic, bay, cinnamon and milk.
  3. Bring to boil then reduce to gentle simmer, cook uncovered 90 min.
  4. Increase heat and cook until liquid evaporates and pork fries in its own fat, stirring, until golden.
  5. Shred pork and serve in warm tortillas with salsa verde.
