  • machaca (dried shredded beef)
  • eggs
  • tomatoes
  • white onion
  • Anaheim or poblano chile
  • garlic
  • vegetable oil
  • flour tortillas
  • cilantro

Ingredients

  • 250 g machaca (dried shredded beef)
  • 8 units eggs
  • 250 g tomatoes
  • 100 g white onion
  • 1 unit Anaheim or poblano chile
  • 2 cloves garlic
  • 20 ml vegetable oil
  • 8 units flour tortillas
  • 15 g cilantro

Instructions

  1. Soak machaca in water 10 min to rehydrate slightly, drain.
  2. Sauté onion, garlic and diced chile in oil.
  3. Add machaca and stir-fry 3 min.
  4. Add diced tomato, cook 3 min.
  5. Pour beaten eggs over mixture, scramble to desired doneness.
  6. Serve in flour tortillas with salsa and cilantro.
