- lamb mince
- flatbreads
- Greek yoghurt
- harissa paste
- cumin
- ground coriander
- paprika
- gem lettuce
- tomato
- red onion
- lemon juice
Ingredients
- 350 g lamb mince
- 2 large flatbreads
- 100 g Greek yoghurt
- 1 tbsp harissa paste
- 1 tsp cumin
- 1 tsp ground coriander
- 0.5 tsp paprika
- 4 leaves gem lettuce
- 1 large tomato
- 0.5 piece red onion
- 1 tbsp lemon juice
Instructions
- Season lamb mince with cumin, coriander, paprika and salt.
- Cook mince in a hot dry pan 8 minutes until browned, breaking up.
- Mix yoghurt with harissa and lemon juice.
- Warm flatbreads in a dry pan 30 seconds each side.
- Spread harissa yoghurt on flatbread, add lamb, lettuce, tomato and red onion.
- Roll tightly and serve.
