- large baking potato
- tinned tuna in spring water
- sweetcorn
- light mayo
- spring onions
- lemon juice
- black pepper
Ingredients
- 1 piece large baking potato
- 160 g tinned tuna in spring water
- 80 g sweetcorn
- 2 tbsp light mayo
- 2 stalks spring onions
- 1 tsp lemon juice
- to taste black pepper
Instructions
- Scrub potato, prick all over with fork. Microwave on high 10 minutes, or bake at 200°C for 60 minutes until fluffy inside.
- Drain tuna, mix with sweetcorn, mayo, sliced spring onions, lemon juice and pepper.
- Split potato open, fluff inside with a fork.
- Pile tuna filling into potato and serve.
