  • 227 gelbow macaroni or chickpea pasta
  • 237 mlcottage cheese (low-fat)
  • 356 mlsharp cheddar, shredded
  • 119 mlmilk (1%)
  • 5 mlDijon mustard
  • 3 mlgarlic powder
  • 1 mlsmoked paprika
  • 3 mlsalt
  • 1 mlblack pepper

Ingredients

  • 8 oz elbow macaroni or chickpea pasta
  • 1 cup cottage cheese (low-fat)
  • 1.5 cup sharp cheddar, shredded
  • 0.5 cup milk (1%)
  • 1 tsp Dijon mustard
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Cook pasta per package directions. Reserve ¼ cup pasta water before draining.
  2. Blend cottage cheese, milk, Dijon, garlic powder, paprika, salt, and pepper until smooth.
  3. Return pasta to pot over low heat. Add cottage cheese blend.
  4. Stir in shredded cheddar gradually until melted and creamy.
  5. Add reserved pasta water if needed for desired consistency.
  6. Serve immediately.
