  • 800 gwhite fish fillets (tilápia, corvina or similar)
  • 120 mlpassion fruit pulp (fresh or frozen)
  • 3 clovesgarlic cloves, minced
  • 30 mllime juice
  • 15 mlhoney or agave
  • 15 gfresh coriander, chopped
  • 15 mlolive oil
  • 1 to tastesalt and black pepper

Instructions

  1. Preheat oven to 200°C. Line a baking dish with parchment.
  2. Whisk together passion fruit pulp, garlic, lime juice, honey, olive oil, salt, and pepper.
  3. Place fish fillets in the dish; pour passion fruit glaze over.
  4. Bake 15–18 min until fish flakes easily.
  5. Garnish with fresh coriander. Serve with white rice and steamed broccoli.
