- 474 mlbrown rice, cooked
- 1 canblack beans, drained
- 237 mlfrozen corn, thawed
- 1 wholeavocado, sliced
- 30 mllime juice
- 5 mlsmoked paprika
- 5 mlgarlic powder
- 3 mlsalt
Ingredients
- 1.5 lb chicken breast
- 0.25 cup BBQ sauce (low-sugar)
- 2 cup brown rice, cooked
- 1 can black beans, drained
- 1 cup frozen corn, thawed
- 1 whole avocado, sliced
- 2 tbsp lime juice
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 0.5 tsp salt
Instructions
- Season chicken breast with smoked paprika, garlic powder, and salt.
- Grill or pan-sear chicken 6–7 minutes per side until internal temp reaches 165°F.
- Brush with BBQ sauce in the last 2 minutes of cooking. Let rest 5 minutes, then slice.
- Warm black beans and corn in a small saucepan.
