- halloumi
- courgette
- red pepper
- red onion
- cherry tomatoes
- lemon juice
- olive oil
- pomegranate molasses
- fresh mint
- za'atar
Ingredients
- 250 g halloumi
- 1 large courgette
- 1 large red pepper
- 1 medium red onion
- 150 g cherry tomatoes
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp pomegranate molasses
- small bunch fresh mint
- 1 tsp za'atar
Instructions
- Slice halloumi 1cm thick. Chop courgette and pepper into strips, halve onion.
- Toss veg with 1 tbsp oil and za'atar. Grill or roast 200°C for 10 minutes.
- Grill halloumi in a hot dry pan 2 minutes each side until golden.
- Whisk lemon juice, remaining oil and pomegranate molasses.
- Arrange vegetables and halloumi. Drizzle dressing, scatter mint.
