  • 150 ml Malbec wine
  • 2 whole shallots
  • 80 ml beef stock
  • 20 g butter
  • 3 g fresh thyme
  • 15 ml olive oil
  • 2 g sea salt
  • 2 g black pepper

Instructions

  1. Season steak with salt and pepper.
  2. Sear in olive oil 3 min per side for medium-rare; rest.
  3. Sauté minced shallots in same pan 3 min.
  4. Add Malbec; reduce by two-thirds.
  5. Add stock; simmer 5 min.
  6. Finish with butter; adjust seasoning.
  7. Slice steak; drizzle with Malbec sauce.
