  • 150 g black beans (cooked)
  • 30 g cassava flour (farofa)
  • 30 g mozzarella cheese
  • 1 medium tomato
  • 10 g butter
  • 1 piece garlic cloves
  • 3 g salt
  • 10 g green onion

Instructions

  1. Mash beans with garlic and salt in a small pan over low heat. Heat through.
  2. Toast farofa in a dry pan until golden and fragrant, 3 minutes.
  3. Fry eggs in butter to desired doneness.
  4. Serve eggs over bean mash with cheese, fresh tomato slices, toasted farofa, and green onion.
