  • pinto beans (cooked)
  • cassava flour (farofa)
  • linguiça sausage
  • eggs
  • kale (shredded)
  • garlic cloves
  • olive oil
  • salt
  • black pepper
  • chili flakes

Ingredients

  • 250 g pinto beans (cooked)
  • 70 g cassava flour (farofa)
  • 100 g linguiça sausage
  • 4 piece eggs
  • 60 g kale (shredded)
  • 2 piece garlic cloves
  • 15 ml olive oil
  • 4 g salt
  • 2 g black pepper
  • 2 g chili flakes

Instructions

  1. Fry sausage in olive oil until crispy. Add garlic and cook 1 minute.
  2. Add beans and heat through. Add kale and stir until wilted.
  3. Add farofa and toast in the pan, 3 minutes, stirring constantly.
  4. Push everything to the sides. Crack eggs into the center.
  5. Scramble eggs gently into the mix. Season with salt, pepper, and chili flakes. Serve hot.
