- 15 g coarse sea salt
- 5 g black pepper
- 5 g garlic powder
- 20 ml olive oil
- 1 piece lime
Instructions
- Score the fat cap of the picanha with a crosshatch pattern.
- Rub all sides generously with coarse salt, pepper, and garlic powder.
- Preheat grill to high heat. Brush with olive oil.
- Grill fat side down for 5 minutes, then flip and grill 4-6 minutes per side for medium.
- Rest for 10 minutes, slice against the grain, and serve with lime.
