  • 3 wholeeggs
  • 0.5 cupGreek yogurt (0% fat)
  • 0.5 cupalmond milk, unsweetened
  • 1 tspbaking powder
  • 1 tspvanilla extract
  • 2 tbspsugar-free maple syrup
  • 0.5 cupmixed berries
  • 1 tbspbutter

  • 0.5 cup almond milk, unsweetened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp sugar-free maple syrup
  • 0.5 cup mixed berries
  • 1 tbsp butter

Instructions

  1. Whisk protein powder, oat flour, and baking powder in a bowl.
  2. In another bowl, beat eggs, Greek yogurt, almond milk, and vanilla extract.
  3. Fold wet into dry ingredients until just combined — small lumps are fine.
  4. Heat a griddle over medium heat and melt butter.
  5. Pour ¼ cup batter per pancake. Cook 2–3 min until bubbles form, then flip and cook 1–2 min more.
  6. Stack and top with berries and sugar-free maple syrup.
