  • pasilla chiles
  • dark chocolate
  • tomatoes
  • sesame seeds
  • pumpkin seeds
  • garlic
  • chicken broth
  • cinnamon
  • cumin
  • plantain

Ingredients

  • 800 g chicken thighs
  • 4 units mulato chiles
  • 3 units ancho chiles
  • 2 units pasilla chiles
  • 50 g dark chocolate
  • 300 g tomatoes
  • 30 g sesame seeds
  • 30 g pumpkin seeds
  • 5 cloves garlic
  • 500 ml chicken broth
  • 3 g cinnamon
  • 3 g cumin
  • 1 unit plantain

Instructions

  1. Toast and soak dried chiles in hot water 20 min.
  2. Fry tomatoes, garlic, plantain, sesame and pumpkin seeds.
  3. Blend chiles with tomato mixture, spices and broth until smooth.
  4. Cook sauce in oil 10 min, add chocolate and simmer 20 min.
  5. Season and poach chicken thighs in mole sauce 25 min.
  6. Serve over rice garnished with sesame seeds.
