- onion

Ingredients
- 1200 g beef tongue
- 200 g onion
- 8 cloves garlic
- 4 units bay leaves
- 10 units peppercorns
- 15 g salt
- 16 units corn tortillas
- 200 ml green salsa
- 80 g white onion
- 20 g cilantro
- 30 ml vegetable oil
Instructions
- Cover tongue with water, add onion, garlic, bay, peppercorns and salt.
- Simmer 3 hours until very tender. Cool in liquid.
- Peel skin off tongue while warm, slice thin.
- Pan-fry slices in oil until edges crisp.
- Serve in warm tortillas with green salsa, diced onion and cilantro.
