London Street Market Chicken Shawarma

  • chicken thighs boneless
  • cumin
  • smoked paprika
  • cinnamon
  • garlic cloves
  • lemon juice
  • olive oil
  • pittas
  • Greek yoghurt
  • pickled red cabbage
  • tomato

Ingredients

  • 500 g chicken thighs boneless
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.25 tsp cinnamon
  • 3 pieces garlic cloves
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 large pittas
  • 80 g Greek yoghurt
  • 60 g pickled red cabbage
  • 1 medium tomato

Instructions

  1. Mix spices, 2 garlic cloves (crushed), half the lemon and 1 tbsp oil. Marinate chicken 15 minutes.
  2. Cook chicken in a hot griddle 6 minutes each side until charred.
  3. Mix yoghurt with remaining garlic and lemon for sauce.
  4. Rest and slice chicken.
  5. Warm pittas, fill with chicken, garlic sauce, pickled cabbage and tomato.
