  • romaine lettuce
  • Parmesan
  • wholegrain bread
  • Greek yoghurt
  • anchovies
  • garlic
  • lemon juice
  • Dijon mustard
  • Worcestershire sauce
  • olive oil

Ingredients

  • 400 g chicken breast
  • 2 heads romaine lettuce
  • 40 g Parmesan
  • 2 slices wholegrain bread
  • 80 g Greek yoghurt
  • 3 fillets anchovies
  • 1 clove garlic
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp olive oil

Instructions

  1. Cube bread, toss with oil, bake at 180°C for 10 minutes for croutons.
  2. Blitz yoghurt, anchovy, garlic, lemon, mustard, Worcestershire for dressing.
  3. Season chicken, grill 5 minutes each side until cooked through. Slice.
  4. Chop romaine, toss with dressing.
  5. Top with chicken, croutons and Parmesan shavings.
