- sea bass fillets skin-on
- lemon
- fresh thyme
- capers
- olive oil
- butter
- garlic
- flat-leaf parsley

Ingredients
- 400 g sea bass fillets skin-on
- 1 whole lemon
- 4 sprigs fresh thyme
- 1 tbsp capers
- 1 tbsp olive oil
- 10 g butter
- 1 clove garlic
- handful flat-leaf parsley
- to taste salt and pepper
Instructions
- Pat sea bass dry with kitchen paper. Score skin, season both sides.
- Heat oil in a non-stick pan until very hot.
- Place fish skin-side down, press flat for 30 seconds. Cook 4–5 minutes undisturbed.
- Flip, cook 2 minutes. Add butter, garlic, thyme and capers.
- Baste fish with foaming butter 1 minute.
- Serve with lemon juice and parsley.
