Turkey and Cranberry Flatbread

  • turkey breast strips
  • wholemeal flatbreads
  • cranberry sauce
  • light brie
  • rocket
  • red onion
  • olive oil
  • fresh thyme
  • black pepper

Ingredients

  • 300 g turkey breast strips
  • 2 large wholemeal flatbreads
  • 3 tbsp cranberry sauce
  • 60 g light brie
  • handful rocket
  • 0.5 piece red onion
  • 1 tsp olive oil
  • 1 tsp fresh thyme
  • to taste black pepper

Instructions

  1. Season turkey with thyme and pepper. Sear in oil 3 minutes each side.
  2. Preheat grill to high.
  3. Spread cranberry sauce on flatbreads.
  4. Slice turkey and arrange on flatbreads. Top with brie slices and red onion.
  5. Grill 5 minutes until brie melts and edges crisp.
  6. Scatter rocket and serve.
