Ingredients

  • 1.5 lbchicken breasts, thinly sliced
  • 3 wholemixed bell peppers (red, green, yellow), sliced
  • 1 wholeonion, thinly sliced
  • 3 clovesgarlic cloves, minced
  • 8 gchili powder
  • 4 gcumin
  • 4 gsmoked paprika
  • 2 tbsplime juice
  • 1 tbspolive oil
  • 1 to tastesalt and pepper
  • 10 gfresh cilantro, to serve

Instructions

  1. Combine chili powder, cumin, paprika, salt, and pepper. Toss chicken slices with half the spice mix and lime juice; marinate 5 min.
  2. Heat oil in a large skillet or cast-iron pan over high heat.
  3. Cook chicken in a single layer 3โ€“4 min per side until cooked through. Remove and set aside.
  4. In the same pan, add peppers and onion with remaining spice mix. Cook 5โ€“6 min, stirring, until softened and slightly charred.
  5. Add garlic; cook 1 min. Return chicken; toss together.
  6. Serve over rice or in warm tortillas, topped with fresh cilantro.
