Ingredients

  • 2 lbschicken thighs, boneless skinless
  • 0.3 cuppineapple juice
  • 0.3 cuplow-sodium soy sauce
  • 2 tbspbrown sugar
  • 3 wholegarlic cloves, minced
  • 1 tspfresh ginger, grated
  • 1 tspsesame oil
  • 1 tspcornstarch
  • 3 cupscooked steamed rice
  • 2 tbspsesame seeds and spring onion to serve

Instructions

  1. Mix pineapple juice, soy sauce, brown sugar, garlic, ginger, and sesame oil.
  2. Marinate chicken at least 30 min.
  3. Pan-fry chicken 6โ€“7 min per side until cooked through; remove.
  4. Pour marinade into pan; add cornstarch slurry. Simmer to glaze consistency.
  5. Slice chicken; serve over rice with sauce, sesame seeds, and spring onion.
