Ingredients
- 200 g red lentils
- 15 g bush tomatoes dried
- 400 g canned diced tomatoes
- 1 whole brown onion
- 3 whole garlic cloves
- 3 g cumin
- 2 g turmeric
- 800 ml vegetable stock
- 15 ml olive oil
Instructions
- Soak bush tomatoes in warm water 10 min; chop.
- Sauté onion and garlic in olive oil 5 min.
- Add cumin and turmeric; stir 1 min.
- Add lentils, bush tomatoes, canned tomatoes, and stock.
- Simmer 25 min until lentils are soft.
- Partially blend for texture; season to taste.
