Ingredients

  • 200 g barramundi fillet
  • 50 g macadamia nuts
  • 5 g lemon zest
  • 1 whole egg white
  • 15 ml olive oil
  • 2 g sea salt
  • 5 g fresh dill

Instructions

  1. Crush macadamias to coarse crumbs; mix with lemon zest, salt.
  2. Brush barramundi with egg white.
  3. Press macadamia crust firmly onto fish.
  4. Heat oil in non-stick pan over medium-high heat.
  5. Cook crust-side down 4 min; flip 2 min.
  6. Rest 2 min and serve with fresh dill.
