- 200 g barramundi fillet
- 50 g macadamia nuts
- 5 g lemon zest
- 1 whole egg white
- 15 ml olive oil
- 2 g sea salt
- 5 g fresh dill
Instructions
- Crush macadamias to coarse crumbs; mix with lemon zest, salt.
- Brush barramundi with egg white.
- Press macadamia crust firmly onto fish.
- Heat oil in non-stick pan over medium-high heat.
- Cook crust-side down 4 min; flip 2 min.
- Rest 2 min and serve with fresh dill.
